We got some beautiful carrots with the greens attached in our CSA box this week, along with some beets that I initially mistook for radishes, a zucchini, a cucumber that I initially mistook for another zucchini (it was dark, okay?), some green beans, a big bunch of basil, and an onion. We also got our usual bag of coffee beans and dozen eggs.
Despite some ambiguous information to the contrary, one article saying that carrot greens were not poisonous was apparently enough to convince me they’re safe to eat. We’re not dead yet, so I guess the joke’s on you Wikipedia! Just kidding. They’re fine. Really. You should eat some.
I found a recipe saying you could sautee carrot greens in garlic and onion and make a pretty yummy scramble. I also had some leftover dill from making tzatziki earlier in the week and dill in scrambled eggs is one of my favorite combinations. I was really excited about the beets, so I decided to make a roasted vegetable ragout type thing on the side.
I washed and quartered the beets, and spread them on a baking sheet with some carrots and whole cloves of garlic. Drenched the whole mess in olive oil and roasted them for about 30 minutes, until they were starting to caramelize and smell delicious.
While the veggies were roasting, I sauteed more garlic and a bit of onion in olive oil in a pan, and then added the chopped greens when the garlic was starting to crisp. I sauteed those for a bit longer, and then added some dill. Lastly, I stirred in the eggs and scrambled. I’d imagine you could substitute tofu for a vegan scramble, if you were so inclined. So all in all, local ingredients made up for well more than 3/4 of the ingredients I used. Cool!
I have a tendency to get overly excited and try to cook all the contents of the CSA box in one go, so we might have to move to a more frequent subscription next year. Today, I’m dreaming up possibilities for the gorgeous basil bunch. It smells good enough to eat by itself, but I figure picking up a fresh mozzarella ball and some ripe tomatoes would make it even yummier.
